不是连字符，应该是破折号，表示边想边说，追加举例时的语气停顿。

个人看法：后面的说话者给出的多个人（the other DWARVES），这里的话估计不是1个人说的，而是3个人。所以破折号表示一个紧接着一个在插话，符合语境，也有画面感。“And more cakes（person A）- and ale（person B）- and coffee, if you don't mind（person C）,”...
